National Pancake Day

Everyone loves soft and fluffy cakes dipped in syrup for breakfast or any other moment in the day. Pancakes are one of the most loved foods, especially for those who have a sweet tooth.

National Pancake Day is on Mar. 1 of this year. Every year, this holiday falls on a day between the months of February and March, about 47 days before Easter. The first ever National Pancake Day occurred in 2006 but in 2005, it was called ‘Lumberjack Day’ based on the conventional idea that lumberjacks ate many pancakes.

There are multiple creative ways to make pancakes, and the most common way is usually to make them fruit flavored. Banana, strawberry, raspberry and blueberry are amongst the most popular fruits to use as toppings or within the batter.

Banana pancakes are a fan favorite because they taste good and are quite easy to make. The ingredients for banana pancakes are:

  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 egg (beaten)
  • 1 cup of milk
  • 2 tablespoons vegetable oil
  • 2 ripe bananas (mashed)

After acquiring the ingredients, the directions are quite simple. First, you must mix flour, white sugar, baking powder and salt together. Next, in a separate bowl or container, you must mix the egg, milk, vegetable oil and bananas. Then, stir both mixtures into each other, and this makes the batter. Lastly, use ¼ cup of the batter for each pancake. Pour the batter in a lightly oiled frying pan or griddle with medium heat. Make sure the pancakes are golden on both sides.

As mentioned previously, pancakes can be made in multiple ways; you can even put a vegan twist to it for vegetarians. The measurements are:

  • 1 cup of flour
  • 2 tablespoons of organic sugar
  • 1 cup of non-dairy milk
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons of canola oil and 1 teaspoon of vanilla.

Add flour, sugar, baking powder and salt to one bowl and stir. In another bowl, add the milk and vanilla, then continue to stir. Next, combine both mixtures and use a whisk until it becomes smooth. Lastly, pour the batter on a griddle with medium heat and cook until the pancake is golden.

Now that fruits and vegan options have been covered, gluten-free pancakes are another good option. The ingredients required for gluten-free pancakes are:

  • 1 cup all-purpose gluten-free flour (oat, almond, coconut flour)
  • ½ teaspoon gluten-free baking powder
  •  ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 egg, 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract
  •  ½ cup cold milk.

Mix all the ingredients separately in two different bowls like the previous recipe and put it on the griddle. Make sure it is slightly oiled with medium heat, then pour the batter to match the desired size of your pancakes. Cook and flip them until it is golden on each side.

This brownie batter pancakes recipe is for those that like pancakes and brownies. The ingredients for this recipe are:

  • 1 cup of brownie mix
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup milk
  • ¼ cup unsalted butter (melted)
  • 2 large eggs with the yolks and whites separated.

In one bowl, mix the brownie mix, flour, and baking powder together. Then in a second bowl, whisk the milk, butter, and egg yolks. Then, pour these two mixtures into each other and mix them. Then, add the egg whites and continue to whisk. Give the batter about 10-15 minutes to thicken. After this, now it’s time to cook. Use a nonstick pan or griddle on medium heat and pour ¼ cup of batter or whatever desired measure to size the pancakes.

After making these pancakes, you can choose to eat these bare or with toppings. For those that love toppings, you can use whipped cream, butter, different flavors of syrup, fruits or berries. There are limitless options in terms of toppings; it all comes down to personal preference. Make sure to enjoy these tasty treats!
